El Llano is located on the southern hills of El Llano de la Piedra, a small town where the Montero family lives. Carlos and his father bought the empty farm in the 1980s with a loan from CoopeDota and began planting coffee. After a few years, they repaid the loan with their first harvest. Carlos and his brothers Beto and Juan-Eli helped their father on his part of the plantation, while Carlos looked after his own. Carlos later focused on growing apples in La Pastora and gave his share of El Llano to his brothers before buying it back later. Today, the plantation covers 3 hectares and is planted with Catuai coffee. Fertile soil and shade from bananas, lemons, mangoes, and poros benefit the long-term health of the plot and the cup. The Pirris River valley complements the farmers’ work by providing optimal light exposure and a constant refreshing breeze. Process: honey. After the coffee is counted, piled, and secured on the truck, Carlos takes it to the Don Eli wet mill, where his son Jacob processes it. The coffee is generally processed on the day it is delivered, though it may also rest overnight in the receiving tank for controlled fermentation. When it is time to process it, Jacob starts the equipment, which uses a pump to recycle the water that moves the coffee through the depulping machine. He carefully monitors depulping and the coffee’s passage through the mechanical demucilager at the end of the Penagos Eco-Pulping machine. He chose to leave all the mucilage on the beans to dry, believing this increases the complex body and sweetness of this particular lot.
