A soft, sweet cup of stewed pear and cocoa, finishing with gentle florals. Nuevo Paraiso sits in the La Concordia district of Chiapas, in Mexico's far south. Farms here climb from 1,350 to 1,800 metres, planted mostly with Bourbon, Marsellesa, Caturra and Typica. Most farms are one to two hectares and sit right beside the family home, with washing and drying stations often at the house as well. Ice cream bean trees provide shade and fix nitrogen in the soil, and coffee pulp is composted back into the farm as organic fertilizer. After picking, the coffee ferments for about 40 hours in concrete tanks. It then dries for 12 to 15 days on patios and raised beds, depending on the weather.
