These smallholders favor the natural process. The coffee cherries are carefully sun-dried on raised beds and turned frequently to ensure uniform drying. This meticulous care preserves the intrinsic sugars of the bean, resulting in a distinctive, vibrantly floral and fruity flavor profile.
