Finca Santa Rosa is a family-owned coffee farm nestled in the foothills of the rugged north of El Salvador. The farm lies about 2 km north of the town of Ilobasco, in the Department of Cabañas. The area is called Sitio Viejo — “the old site”. At Finca Santa Rosa, all of the coffee is shade grown without the use of any pesticides or artificial fertilizers. Shade-grown coffee means planting large trees to shelter the much smaller coffee trees beneath them. The shade protects the coffee from long periods of direct sun, and it makes the beans ripen more slowly, which enhances their flavor. Here at Java Blend, our team has taken this exceptional crop and light roasted it to highlight the hard work of the farmers, along with the highlighting the unique terrior. Origin: El Salvador. Farm: Finca Santa rosa. Producer: Pacas family. Process: Natural. Tasting Notes: Caramelized almonds, cocoa, stonefruit
