Buy at Zab Coffee Roaster ↗Watermelon co-fermented coffee from Edinson Argote at Quebraditas farm in Oporapa, Huila, Colombia. The cherries rest for 24 hours, then are depulped and co-fermented for 72 hours with watermelon and yeast. A thermal shock is also applied by immersing the beans in hot water and then quickly cooling them in very cold water.
